Trebek is irreplaceable but Burton seems a good fit.

If not a fan, you can still dial up one episode (he's pretty much in all of them) and get a sample of his voice and delivery. Smooth as olive oil.
I watched the original Star Trek regularly way back when, but never got into any of the following shows. And I can't even recall hearing of Reading Rainbow, never mind seeing it...
If STNG or Reading Rainbow happen to come on I'll check it out, but not concerned really who's next for Jeopardy. Will likely just see what happens.
Star Trek the Next Generation is a better show than the Original series - so is DS9 which is largely responsible for "series arc" television shows where a whole season is one story. The network hated Star Trek Deep Space 9 (DS9) because it makes it difficult to run in syndication.
If you enjoyed the original then try and see an episode called Relics in TNG. It is a good Geordi episode and stars Scotty from the original series. He is a relic of time rescued from a transporter buffer and brought into the future. A great engineer who is now 75 years out of date and feels useless.
