PS3 and true 1080p output? need some help and suggestions (please)

I have a Sharp 21000 DLP (1080p) that is hooked up to a PS3 (fully upgraded software) with a component cable. At the main Sony screen it shows as being 1080p but when I playback a blu-ray disk it comes up as 1080i. Does anyone know why it goes this route? (am I doing something wrong?)

I've tried a HDMI connection but if I set the resolution above 480p then the screen becomes full of electronic noise and not viewable. I had the same thing happen when I used the HDMI output from a Denon 3910

Has anyone used the HDMI output from a PS3 to a DLP projector? Any suggestions???
