Your plasma display will deinterlace all incoming interlaced signals and will scale (up, in your case) the signal to the display's native resolution (1024x768 for your display).

All display manufacturers have a price point to meet and that bars them from giving their displays top-notch deinterlacing and scaling capabilities. Some displays do one or both processes better than others, but they don't match quality products dedicated to these two processes. Hopefully this doesn't come as a surprise, but your display is from the lower end (quality wise) of Panasonic's plasma line. The quality of the above two processes will not be that great as done by your display.

Make sure you are using the HDMI input of the display (provided your satellite Set Top Box has an HDMI or DVI output). But at minimum, you should be using the component outputs -- YPbPr -- of the satellite STB.

Deinterlacing and scaling in a $100 product isn't going to be much better than what your display is capable of, unless you're buying used and the seller just wants to get rid of the device. Even most of the older DVDO video processors start at around $300 on the used market.
