The extended version is a good film made GREAT, primarily by character development and good acting (esp. Sean Bean as Boromir), both of which are absent in "Attack Of The Clones." This version is the one that should have been shown in the theaters, as it feels much more compelling and complete.
I haven't made it through the last supplement disc, but the third one is superb, "making-of" material. The WETA workshop is amazing.
Follow Ups:
I just finished watching the extended version. Was most happy to see a proper scene of Galadriel's bestowing of the Elven gifts. I agree with you that Boromir is better served by this version, too. I already thought "Fellowship" was a great film, but the new version is even better.
