I find the extended versions of the Lord of the Rings movies and the director's cut of Ridley Scott's "Kingdom of Heaven" superior to the original versions. In each case the added material fleshes out characters and provides better continuity as far as I'm concerned.
I found the LOTR films annoying in the cinema releases, largely because of what was in the books but wasn't in the films. That probably hasn't improved all that much in the extended versions but they never seem to have annoyed me in the same way.
In 'Kingdom of Heaven", the additional material clarifies relationships between some of the characters, provides added information that makes at least one character more credible for me, and makes the political situation in Jerusalem much clearer which also helps for me.
In general you may certainly be right but in particular there are certainly some films which I enjoy considerably more in their director's cut editions.
