I realise many flicks should, just as many should remain Black&White. However, many old movie don't have soundtracks which would complicate establishing a proper stereo stage. On the contrary, their sound is quite simple. Those with soundtracks would require developing an expert digital system that wouldn't parody the original.
In any case, DVD's could vary well put stereophonic sound to the colorized version already in it w/o offending on anyone's sense of artistry. Afterall, those that might be wouldn't ever watch that version anyway.
