How are standard CD's incorporated into 5.1,6.1etc

I have not bought a processor yet nor a DVD player and I read the post below about 5.1, 6.1 and 7.1. I understand how the various DVD signals can be split to the various .1's, however, I like to listen to standard CD's. What does a typical processor do with a audio CD? Does it just play two channels, or can all seven channels be played? Are there processor available which will play 5 or 6 or 7 channels?
