DVI-I is just DVI-A and DVI-D on the same connector. In the case of your HTPC, it means that the computer can output a digital or analog signal over the same cable. You'd never use both at once, so if the projector supports DVI-D, then go with DVI-D.

If you are going with DVI-D, I expect that the quality of the cable won't be much of an issue -- it will either work, or it won't.
