What screen do I need for a Panny 700?

I'm buying a Panasonic PT-AE700U LCD Projector (1000 Lum/2000:1 CR) . I'd sure appreciate any help I could get on what type of screen to get for it. Not so much brand, but type. For instance, should it be grey with no gain or white with a 1.5 gain etc.
My den/Kitchen area is open and pretty big(30 x 26) The Den takes up the East,South,and West walls. The Unit will project onto the west wall meaning the morning sun from the east will hit that wall hard. I do have wood blinds that do a pretty good job of keeping the light under control but it isn't a basement and I live in Las Vegas which if you've been this way know how bright it can be. The projector will be a ceiling mount about 17 feet away. Main seating about 15 feet away. The screen will end up being around 100 inch diag. I'm a stereo tube dude who knows very little about this. So I truly appreciate your help.
