I cannot say exactly why some scenes were cut out but too me some seem to weaken the appearance of strength of Vito Corleone a little. The scenes appear to make him a little more 'regular'. Without them as shown in the cut version Don Corleone seems almost 'super human'. Maybe I'm speaking over the top but look at the cut out "Genco deathbed" scene and see if you kind of get what I'm trying to say.
