HDMI vs. component video

I am installing a new theater with a 720p front projector. In an adjacent room we have a flat screen plasma, also 720p which will be in my wife's exercise area for her dvds. Her flat screen will also be used to display the same thing going on the FP for football parties, etc. I have both HDMI and component video run to my FP...the question is, should I run HDMI to the plasma or will there be a noticeable difference between that and the comp. video cable? Further, would the Dish network tuners have HDMI capability or is it just comp. video. Sorry for the length of this message but we are needing to run the cable to the plasma and are running out of time. HELP! and thanks in advance.
