If, and only if, your Hitachi has HDCP on the DVI input.

"(b) how should I connect the new Blu Ray player such that the video signal goes directly to the TV via the HDMI-DVI cable, while the audio signal goes to my AV receiver?"

Set the BRDP to send audio out via digital (coax or TOSlink) or via analog, depending on what your AV receiver can handle.
