Short list has to include Master & Commander. Pixar stuff also has exceptional sound design

My favorite Blu-rays for sound design (aside from the 2L audio only releases and Neil Young archives) are:
1. Ratatouille
2. Wall-E
3. The Last Waltz
4. Master & Commander
5. Inside Man
6. Quantum of Solace
7. Casino Royale (two-disc version)
8. The Prestige
9. Matrix
10. No Country for Old Men (not too much immersive sound, but extremely realistic and there is the solo explosion, car accident and small arms fire)
