I'm thinking about hanging a projector screen but I don't have access to studs in the wall. Is there a best practice? If I put nails in the wall the sheet rock just crumbles. This is a large pull down screen ...

There must be some type of stud in the wall to support the wall- There are a number of ways to locate studs - either by ear, or with a device...
If there are in fact no studs - then I would take a large piece of plywood, and secure it with lots of drywall screws, then attach the screen from the plywood.

Those plastic plugs are OK if used on a wall for some lighter items at a single hanging. For constant use (pulling, reeling back) however I'd opt for wall anchors. Just my opinion...

And use a LOT OF GLUE. That way, when removal time comes, a good chunk of wall comes, too.
US code typically calls for studs '16 inches on center'........Joists, which are LEVEL are also either 16 or 24 on center while the same goes for rafters.....which are 'tilted' and parallel the roof line.
A Joist and a pair of rafters, to a 'peak' would be the minimum requirement of a TRUSS....
