A novice question: how do I get a good digital audio stream from a video app, like Met Opera on Demand or Berlin Phil?

Can I use my Samsung TV optical out into a two-channel DAC? Or do I need to get it from Roku?

I'd be happy with 2 channels.

Thanks.

Sure you can use optical output from your Samsung to external DAC, just set output audio stream to PCM.

You mean when the digital signal goes from Roku through the TV set there is no loss of resolution, no added jitter, etc?

My Roku doesn't have a separate digital out, just the HDMI connection, so you'd have to use the TVs optical out.

I wouldn't bother about jitter and there is no loss in resolution. Give it a try, connect Samsung to your external DAC with toslink cable, check TV audio settings (it's digital audio output must be set to PCM, not bitstream) and that's it.
