Clarify this for me please

Now I presume your JVC recorder is an S-VHS, right?

Ok, if you play an S-VHS recorded tape you will get true s-video (split) output. But if you play a standard VHS tape, it is still only a composite signal coming out of those S-video sockets. It just cannot be anything else!!!
