Do your best to keep the height of the C speaker's mids/highs as close to the height of the L and R speakers' mids/highs. As sound pans from one side of the room to the other, it should flow in a smooth flat horizontal plane. If your C speaker is too high or too low, you risk changing that smooth flat plane to a hill or a valley.
