Here's a scenerio where it may be handy.
Imagine a home theater wherein your DVD, TiVo, and Sat, and (GameCube, XBox, et cetra) all go into your Reciver via S-video then out to the TV using the S-Video monitor out. What do you do with your VCR? Well, I'd use a composite to S adapter so that my whole system can remain in the "S" domain. It's not an image enhancement product as much as a convenience one.
P.S. tributaries makes one with Y and C adjustments for $100.
