The answer....

It depends. Some Pre/Pros take the PCM signal and just transfer it into stereo. Others take the PCM signal and try to decode dolby surround out of it.

With pre/pros in the latter category, you should be able to modify the default behaviour so that it will run in stereo on a PCM source. This isn't difficult, and with these being intended to run as surround controllers I can understand the logic of defaulting to DPL. I don't like it, but I understand it.
