To answer:

1) i've heard s-video cables are superior to the coax typical of cable tv. but does it make a difference when used FROM the cable box to the tv? (as opposed to coax)

Generally yes, but how much, if any, of an improvement you see will depends on the quality of the transmission (not always good from the little I have seen) and the quality and screen size of your TV

2) does the quality of the s-video cable matter?

It might, but in your case probably not. The answers above apply to this also.

3) i've got a denon avr-1802 receiver. how should i set up my cable tv: a) cable box -> s-video -> denon -> s-video -> tv -OR-
b) cable box -> coax -> tv

I'm not familiar with your Denon but if it has video switching then it would be more convenient to use (a) to synchronise audio & video with your selection. If not then the more direct the path the better.

Theoretically S cable gives better video but you may not detect any difference. Try it out & find out for yourself!!!
