depends on the deinterlacer

If the plasma has the better deinterlacer (480i > 480p), then feed it 480i. If the DVD player has the better deinterlacer (480i > 480p), then feed the plasma 480p from the DVD player.

It's all down to what produces the better image and the least amount of artifacts. A great test is the opening scene of Star Trek: Insurrection. If a deinterlacer is up to that task, it's worth using.
