You make good points, Racerguy. The problem was that my STB RCA ouputs were taken up by audio cables going from STB to TV (which only accepts DVI, not HDMI). But I found an adaptor at Vampire Wire which will allow me to run 2 RCA pairs from one pair of outputs, so I will be doing what you suggest. Excuse the brain cramp and thanks for your help.

AFAIK, every STB has a setup mode which will let the user choose DD2.0 rather than 5.1.

One further thought. I just noticed you said, "DD 2.0." I am not a video or multichannel guy (audio only), but if DD stands for Dolby Digital, I do not think my DAC (Dodson 218) decodes Dolby Digital. As far as I know, it works only on PCM stereo.

I changed the audio in the Setup menu for the Motorola QIP 6416 STB from Surround to Stereo, ran both a coaxial digital cable and then an optical cable from the SPDIF outputs on the STB to my DAC but got only 5.1 "static." Verizon FIOS customer support could not help and Motorola will not help. The most I could get out of Motorola was that the default on the SPDIF is set to 5.1 output.
Frustrating indeed. I did not have this problem with my Direct TV STB.
Any ideas are welcome.
