David has given you excellent information for the projector. The site he recommended has numerous tools for deciding on what model is best for you and your budget
For your screen, have one of those sign shops make you a sign in the screen size that you want. On the back of it, create a rectangular "holder" that can be slid onto the plasma screen. You might want to cover the inside of the holder with felt or a similar soft material. Voila, you've turned your 42" screen into a much larger viewing area and it's quite portable.
One more thing. The portable screen needs a better material to properly view your movies. Below is a link to inexpensive DIY screen material that has gotten excellent reviews from the online forums.

What options do I have if I'm looking for an easel like free standing screen? Thanks!

look at the screens that pull up or roll up from the floor not down from a wall or ceiling. I doubt an easel type screen will be satisfacory. That the screen be at the same distance from the projector at each setup and parallel to the projector is critical for uniform picture size and sharpness, and this is all but impossible to do w/o a great deal of work each time you set up with an easel screen. An easel screen will give you odd and difficukt to correct keystoning not to mention areas that are not as sharp as other areas of the picture.
A fixed frame screen or painted wall really works the best. You could mount a roll down screen on the ceiling directly in front of your 42 inch TV, too.
