DVDs have been released with 7 channels. DTS-ES 6.1 Discrete soundtracks contain 7 independent (non-matrixed) channels.
CableTV (digital) contains up to 6 channels using Dolby Digital 5.1 audio. Usually, there are only 2 channels in use.
It may be better to say that delivery mediums contain "up to" x amount of channels, as they may contain less than the maximum supported.

I don't receive cable, but only some poor subset of OTA currently. I did notice that only some of the Spanish Novella cable channels were 5.1 encoded, with most of the rest still being two channel only. Their quality, over my L-C-R setup was a cut above the normal plain old L-R.
Is it lowest-common-denominator thinking that has slowed down adoption of the 5.1 standard (whatever it is called, Dolby?)?

For Blu-ray, it's kicked up a notch to 7.1 audio channels.
I did some research on HT to day and this is what I learned...I have more questions than ever. No two articles seem to agree and they all talk about different subjects. I am not sure that even the experts know everything. Was Joe right?.. Well kind of. The one thing most seem to agree on is that Dolby digital (5.1) has 6 audio channels. I think it is also called Dolby Pro Logic II. We can add speaker (7.1) which I think adds 1 mono track and is split between 2 side speakers. (Dolby digital EX or Dolby Pro Logic 2X 7.1) As far as I can tell 7.1 receivers can also "synthesize" these channels. Most DVD's (and Blu Ray's) have 6 audio tracks but some 7.1 discs (I don't know which one?) has 7. Receivers can go up to 11.2...haven't a clue why? About LFE...sounds good, but what is it? I am guessing it is what a subwoofer can add or full range speakers can do also. I am aware that it can be turned off but isn't that just a high pass filter? I read that some think the fronts and rears should be the same? Are you aware that Dolby labs recommends certain speaker placements? And THX also? All I know is that my Yamaha electronics, my Pinnacle center, My Paradym fronts, my Mission rears and my Definitive Tech sub sound awesome...not sure why that happened.
You might want to try that before getting into another one of these discussions. You're bringing stones to a gun fight.

Interesting. After that shit-storm you created in that thread in your search for infinite knowledge, you totally blow off advice from one of the most knowledgable people on this site.
You have all these half baked notions about these things and, when people try to explain something to you, you just act surprised that you don't understand, or believe, their answers and vomit back more questions and disjointed facts in order to try to fool us into thinking you actually know more than you do and to try to muddy the water and to try to make their answers APPEAR insufficient, or incorrect, instead of trying to do any research on these things yourself.

You seem to have the proper use of the internet wrong. It works best when used to find answers to questions you get from reading web sites. You seem to use it in the opposite manner: To find questions to ask on web sites.
Perhaps a little in depth research on your part is called for here. Obviously, the answers you get here are insufficient for one such as yourself.
So, before you question me, or anyone else here, on our knowledge on this subject, read that book, and maybe a few more. Then get back to us.

what prompted me to try to find the answer myself is that I got a different answer than I did a couple months ago. I am sorry I offend you, I surely did not mean to. I will read that book and I hope the answers are the same...
That depends on your cable provider, your cable box, the channel, and the program.SyFy delivers "Defiance" in 5.1 DD but COSI shows "The Dick Van Dyke Show in glorious 4:3 black and white and stunning 1.0 sound.

You seemed to be focusing on what cable is capable as opposed to what it does on a daily basis.
Maybe if you didn't go ninja nerd all over Joe Murphy when he tried to help you I wouldn't have gotten involved in the first place, and maybe you might have gotten an answer sooner had your question been clearer initially.
but my question was identical both times and as simple as I could make it. Joe's answer stated that DVD's have 7 audio channels. I read that they can have 7 channels, but that is rare and I cannot find one and 2 months ago I was told on this site that there were 6. See why I was confused? I am definitely not a "ninja nerd". I am a retired contractor.
Sometimes the question you thought you asked isn't really the question you meant to ask.
Blu-Rays are technically DVDs, too.
I guess I don't even know what DVD stands for. I read the article, but didn't see anything about Blu Ray disc's. It will take awhile for me to think of a DVD and a Blu Ray disk as the same thing even though they look the same. This article states that a 7.1 Receiver has 8 channels. I read several articles that said it had 7 channels (the two side ones being the same mono signal). See why I am confused?
Google is your friend.Just keep googling and keep reading different articles until your questions get answered. As a contractor you should able to do a little research to get answers to puzzles.
I'm not ready, willing, or able to keep following you down your own personal rabbit hole. I already have a four year-old grand-daughter that keeps finding two new questions for every answer I give. Keep searching for your truth and choose the one that suits you.
