I guess one of the first questions would be, does the 5910 upscale over the component video connections or just via DVI (like my 5900)?

I believe you are correct. The scaling only takes place on the DVI connection (maybe HDMI too). On my 5900 which has DVI, it scales to 720p and 1080i. If I use component video from my Denon, I let my plasma TV/monitor do the scaling.
