My favorite Blu-rays for sound design (aside from the 2L audio only releases and Neil Young archives) are:
1. Ratatouille
2. Wall-E
3. The Last Waltz
4. Master & Commander
5. Inside Man
6. Quantum of Solace
7. Casino Royale (two-disc version)
8. The Prestige
9. Matrix
10. No Country for Old Men (not too much immersive sound, but extremely realistic and there is the solo explosion, car accident and small arms fire)

...the new Star Trek film is also a wonderful sound design.
But for sheer, immersive soundscape glory M&C is my favorite. Absolutely brilliant.
Also agree about Pixar releases and Inside Man.
